Step 1
Place a large pan over medium heat and add 1/4 cup of the olive oil. Add the chopped zucchini, green bell pepper, onion, sunflower seeds, cashews, pistachios, garlic, and 1 teaspoon of salt. Sauté, stirring often, until the onions are translucent and the vegetables are softened and lightly golden, about 7–8 minutes. Remove from the heat and let cool slightly.
