Preheat the oven to 350°F (175°C). Pat the short ribs dry with paper towels and season them generously with salt. Place a Dutch oven over medium-high heat and add the olive oil. Once hot, sear the short ribs on all sides until deeply browned, 3–4 minutes per side. Transfer the seared ribs to a plate and set aside.
