Notes

Low and slow = sweet onions. If they’re browning too fast, lower the heat. | Salt helps pull moisture out early and speeds up softening. | Start with less chipotle if you want it milder, then add more. | Let it sit 10 minutes for the garlic/chipotle flavor to bloom. | Lime juice can vary—add a little at a time if you want it less tangy. | If it’s too thick, loosen with 1–2 tbsp water. | Don’t press the patties down—keeps them juicy. | For even cooking, make a small thumb indent in the center of each patty. | Toast the buns (butter + skillet or grill) for better texture and less sogginess. | Caramelized onions can be made 1–3 days ahead and reheated. | If you want it more “restaurant”: add pickles for acidity to balance the creamy sauces.
