Rinse and clean the softshell crabs if not already cleaned: remove the gills, mouthparts, and apron. Pat dry with paper towels. Place the crabs in a bowl, drizzle with olive oil, and sprinkle with all of the seasoning mix ingredients (garlic powder, onion powder, salt, hot paprika, and black pepper). Toss well so the crabs are evenly coated.
