For a smoother chile paste, you can soak the toasted peppers in hot water for 10–15 minutes before blending. This will make the paste easier to spread. | For a less spicy version, reduce the chile de árbol peppers from 10 to 5. | For extra flavor, finish the corn with more cotija, lime juice, and cilantro right before serving.
